After our weekend of indulgence,
we were happy to eat more lightly. We had some leftover roast beef, so we sliced it thin, arranged it on a bed of redleaf lettuce, scattered it with parmesan curls, and spread a sheaf
of roasted asparagus over all, topping it with caper vinaigrette.
There
was even enough beef left that our niece Melanie and her friend Sam could have their own
roast beef sandwiches when they arrived later that night.
