Salade Richeaume

This was a day of strong winds, when we were too tired to go out for dinner or indeed, anything else.  So we put together a salad of whatever appropriate items our larder contained: a thin-sliced fennel bulb, 2 sliced zucchini, 2 slivered scallions, and some stale bread croutons, all salted and oiled to form the base for a sort of Panzanella.  On it went a couple of giant chopped tomatoes, varied spicy olives, local anchovies, and the best part of a little goat cheese with herbes de Provence. 

It had everything, and wasn't bad with a glass of red wine.
