Quesadillas with Baja Cream and Beans

Many of our dishes are inspired by leftovers from other dinners, in this case, the four flour tortillas we couldn't use for our codfish tacos over a week ago.  We piled some grated swiss cheese and bottled salsa (jazzed up with chopped fresh cilantro) on one tortilla, topped it with another, then pan-fried the two sandwiches on each side until the cheese got melty.  They got topped off with the leftover baja cream from the fish tacos.
To flesh it out, we had some (un-refried) beans from the crockful we made on Sunday.  Easy-peasy.
