The cubed beef we bought at the
Co-op yesterday not only declared its country of origin, but its breed (Hereford).
We browned it in oil; added an onion, bashed
rather than diced with a dull knife, and minced garlic to brown too; then some
cheap red wine and a bit of water to cover, while adding two chopped carrots and
6 or 7 baby potatoes.
It cooked for 3 hours; we had to
remove the vedge halfway along to keep them from breaking up and disappearing
entirely. But it filled the cold flat,
and eventually us, with savor.
