Campanelle with Beet Greens

Several of the Findlay Market farmers offered bunches of beets on Saturday, so we chose one with the freshest greens for this Chez Panisse favorite.

It's becoming fairly standardized to our taste, with dried cranberries instead of currants and the addition of some toasted pignoli.  
Since we had no red onions, we used Vidalias, and campanelle (which don't stick together quite as badly as orecchiette do).
