Sole with Sorrel and Watermelon Salad

We defrosted a packet of Trader Joe's sole fillets, and there were too many as usual.  So we set the more frozen ones aside for another purpose, and used six of the prettier ones tonight. 
We just laid a garden sorrel leaf on each fillet, folded them in half, dipped them in egg and then breadcrumbs, and pan-fried them until they were golden. 

On the side, we had a lovely bowl of our friend Dave's watermelon salad, with black olives, feta, and mint.  It's a summer favorite, and once you have a watermelon in the fridge, it's a wonderful way to use it up.
