Wasabi-Crusted Tuna Steaks with Fennel and Orange Salad

Rather a light meal: a pair of Trader Joe's albacore tuna steaks, salted and smeared on both sides with mayonnaise with a teaspoon of wasabi mixed in, then patted with Holt's homemade panko.  
(His evolved panko method: freeze several slices of white bread, then run them through the coarse grater in the robot-coupe.  Spread the resultant flaky crumbs out on a cookie sheet and let them dry and toast in a low oven for 10-15 minutes.  Remove and use, or freeze for later.)
The panko-crusted tuna steaks went onto a tray in the top of a 400º oven until they were done, just over 12 minutes in this case.  They didn't even need to be browned with the broiler.

As a side dish, we benriner-shaved a bulb of fennel, tossed it with white balsamic and oil, and added slices of bright blood orange and fennel fronds.  Refreshing.
