Boursin-Stuffed Chicken with Beet Salad

Wonder of wonders, Kroger had a sale on chicken breasts unadulterated with fake broth and chemicals.  We celebrated by getting a couple of ginormous ones, cutting a pocket in the side, and stuffing them with herbed cheese.  It did bleed out a little as we browned them on each side and then braised them under cover with some chicken broth; but that only added to the thickness of the sauce.  

On the side, we took a couple of pre-roasted cold beets and sliced them into petals for a beet and blood orange salad, drizzled with a little white balsamic and a sprinkle of salt.
