Baby Flounder Stuffed with Crab

We love looking for the daily special at the various Findlay Market stalls, and today's most unusual appearance was baby flounder, about a pound apiece, at Luken's fish.  Also, we still had a quarter can of crab from our previous crabcakes (1/2 can) and avocado salad (1/4 can), so we could stuff them with crab, an instant classic.
We mixed the crab with minced green pepper and red onion, panko and mayonnaise, and stuffed the mixture into a pocket cut into the fish, like so.

Baked for 20 minutes at 375º, with a little broil at the end to color things up.     
Picturesque on a platter, and a delicious, complete meal.
