Leftover salmon, leftover crab -
what should we do with them? Make fishcakes,
of course.
The salmon was mixed with minced celery
and red onion, the crab with minced onion and red bell pepper. The usual dab of dijon mustard with the least
amount of mayonnaise and breadcrumbs possible went into the mix, and two cakes
were made of each sort.
They were coated with more breadcrumbs
and fried crisp and brown, and each of us got one of each, along with the
vegetable mix left over from the papillotes.
