We mixed up a casserole of chilaquiles, using all our leftover dribs
and drabs of goat cheese, monty jack, the homegrown roasted poblanos that Lois
brought us at Halloween, and pico de
gallo made with garden cilantro and tomatoes.
It strikes us that we've never
shown what our chilaquiles look (looks?) like, so here it is (they are). We use the same casserole every time, as it's
just big enough for four dinner size portions - two for us to eat right away
(or after ten minutes' rest, so the cheese can firm up a bit), and two for
dinner later.
