Sliced pork with Beet Salad

Friday 31 January
Did we say there was a lot of pork roast left over from Monday?  That was the simple protein that would make up for the complications of yesterday's dinner. 
We also had some pre-roasted beets, so they could be sliced and tossed with oil and vinegar.  

As Gordon Ramsay says, "Done."
