A Treat of a Freet

Yes, that's what we sometimes call our favorite quick backup dish, frittata. 


Tonight's version was made with sliced zucchini and red pepper, and a half a chopped onion, plus both cheddar and grana padano for cheeses.  And though the shallow top oven took a while to heat up, it did a pretty good job of crisping the top.
