Roast Pork with Onions

Holt got home early and started roasting a big leg of pork (after cross-scoring its skin for cracklings) on a bed of sliced onions, a recipe inspired by Gordon Ramsay's Cooking with Friends.  Though the meat came out beautifully, we still can't get the hang of the cracklings; they taste great, but they chew like bits of leather, which is basically what they are.

Served this with a fresh rocket and tomato salad (okay, so we're using English rather than American - i.e. Italian - names like arugula).
