Sliced Lamb and Salad

We are trying to have a simple meal every other day.  Not just because it's quick, and uses leftovers that need using.  We're also hoping that it will help keep us slim (-ish) while we're here and not able to go swimming three times a week as we usually do. 

So tonight we sliced some of the cold lamb left over from Saturday, and served it with a salad featuring everything we had in Tuesday's salad, minus croutons, plus scallions (which we got at Wednesday's greenmarket). 

Light, plenty of flavor, and not too repetitive, in our opinion.
