Holt's New Mexican heritage makes posole the traditional New Year's
dish.
We made it with 1 lb. 10 oz. of pork
country ribs, 3 small cans of golden hominy, and 8 long green Anaheim chiles
from Kroger's, roasted in the usual fashion.
Those innocent-looking chiles turned out
to be so hot, the resultant posole
almost scorched our eyebrows. But like the punchline to the joke
about moose-turd pie: "it's good, though."
