Neither of us observe Lent, but we
are eating as if we do. It may have
something to do with the weather warming and the snow starting to retreat. In any case, when we wanted something succulent
to grill, we pulled out a couple of albacore steaks; and as a topping, a
spoonful of the sweet and spicy apricot-habanero glaze that David Warda kindly
gave us a while ago.
Accompanying the fish was a
composed crescent of salad, based on roasted golden beets, then Minneola tangelo sections, then crumbled goat cheese, the first fronds of fresh thyme from under the snow, and a sprinkle of olive oil and white balsamic.
Like a plate of gold topped with flecks of snow.
