Za'atar Chicken with Roasted Root Vedge

Barbara went to see our friend David, cook and creator extraordinaire, at his little brick cottage.  She came back looking sleek and sophisticated, and carrying a jar of David's own home-made za'atar.  
It demanded to be used immediately, so we rubbed the spice on and under the skin of our Saturday chicken and roasted it, with the beautiful and savory results you see.

Heaped all around it were our own garden carrots, sliced parsnips, and turnips, so the plenty can be spaced out over a couple of meals.
