Sorrel Sole and Asparagus with Hollandaise

Today was the Kentucky Derby, and we celebrated in the traditional manner, drinking fresh mint juleps while watching the race on TV.  American Pharoah won instead of our chosen Carpe Diem, but we managed to drown our sorrows in juleps.
For dinner, we defrosted a couple of fillets of sole (luckily, Trader Joe's is now selling packets of frozen sole that are usable by two people), folded in half with sorrel in between, dusted with flour and pan-fried. 
On the side, we tried the AltonBrown method of nuking asparagus, but using the thick purple asparagus we got at Kroger; it took closer to five than four minutes, but was every bit as good with hollandaise sauce.
