Barbara had set aside two damaged
tomatoes to make her green beans on Saturday, and then forgot them
completely. So (horrible fate) she had
to make a fresh tomato sauce out of them today.
She started a little garlic frying
in olive oil, and added a squeeze of tomato paste to sweeten a bit. Then the chopped tomatoes went in to simmer
while she picked a handful of basil leaves in the garden.
When the pasta (trombette) was done,
it was poured into the pan, tossed, and showered with chopped basil leaves and
ricotta salata. It didn't take more than
that to make a late summer dinner.
