Chilaquiles


Tuesday 10 September
We have lots of tortilla chips left over from our August open house, so chilaquiles must be made before they go stale.
Also, since Tom is with us, we can make one meal out of it rather than the usual two.
As it's still summer and the garden is only just beginning to slow down, we used our own tomatoes, rather sparse cilantro, and one of the red, ripe poblano peppers.  The cheeses were monterey jack and colby.  
A cheesy time was had by all.
