Soletimbocca


Thursday 5 September
Our friend Tom Stevenson arrived yesterday, and is staying with us until he can find a place to live for the fall term.  Since Trader Joe's puts too many sole fillets in a packet to serve only two, a natural choice for dinner for three is soletimbocca, a sole fillet folded over a layer of smoked salmon and sorrel leaves on the inside, sautéed and served on a bed of multicolored tomato coulis.
Makes us crazy happy, or just crazy.
