Pan-fried Trout with Onions and Potatoes

We got a pretty pair of rainbow trout at Luken's today, and happened to have some leftover bacon grease.  So we got out a recipe we can't believe we haven't made since we started the blog: pan-fried trout with onions (okay, and we added potatoes too). 


While the thin-sliced onions and diced potatoes were slowly frying in bacon grease in one pan, we cleaned the plump trout, stuffed their insides with parsley and thyme, dredged them in seasoned cornmeal, and fried in their own pan of bacon grease. 
Serve on a platter, as the trout overlap a plate; despite that, you can eat like you're at a fish camp out in the woods.
