There's a Lot of Veal on a Veal Breast...

...but we don't regret that, because it's all so fat and tasty.  We sliced up another batch of stuffed breast to nuke with its jus.  Accompanying it were the chestnuts left over from Christmas day, boiled 15 mins. more in turkey broth, with a few more shallots to flesh them out.  This time the chestnuts were tender, and even though they were boiled rather than roasted, gave us that wonderful Rockefeller Center at Christmas feel.
