From deep in the freezer came the
tail section of a salmon, and Holt sliced a brace of sweet potatoes into thin
fries so they could both be fried in bacon fat.
The sweet potatoes, dusted with coarse salt, were especially crispy and
delicious, and the salmon got a lift from David Warda's green tomato chutney.
