Pork Medallions with Yellow Squash

Wednesday 9 July

More gleanings from the freezer: a packet of five thin slices of pork, seasoned with salt, pepper and thyme, and quickly pan-fried; alongside baby yellow squash from the Farmers' Market, sliced and similarly pan-fried with garlic and a touch of vinegar.

We sort of wish we could have called them scaloppine and zucchini, but they were so not.
