Salade Niçoise

Friday 25 April
We are still eating light, so Salade Niçoise is a natural. 
We pre-boiled the eggs and potatoes, and though we didn't have any green beans, that doesn't make or break a Niçoise.  What makes the difference is tuna, olives, and lots of anchovies in the dressing.
