Pork Chops Piccata with Zucchini and Peppers

Monday 28 April
Mondays are generally busy, so perfect for a quick panfry of pork chops.  
We deglazed the pan with lemon and threw in a few capers for a sauce, and while they rested, sautéed a couple of sliced zucchini with chunks of red romano pepper.

Then we ate this too quickly to take a picture.
