Pork Chops with Peach Chipotle Salsa and Baby Beets

Barbara's meanderings yesterday included Bigg's, where she picked up two monster pork chops; and Holt found this recipe that happened to include things we already had (except the fresh cilantro, which was just two wizened little plants - don't know what happened to our favorite opportunistic weed this year).
We followed the recipe pretty closely, and it came out quite well, though it seemed a shame not to stuff pork chops that thick with something; maybe queso fresco next time.

We really liked the Domaine duSelvard Cheverny 2012 we drank with this meal, but we can't remember where we found it.  Oh well.

Today at the Farmers' Market we got a bunch of four baby beets for $2; we roasted and served them jewel-like on a bed of their greens, which we'd sautéed with some cloves of surprise garlic Barbara harvested today from last year's bed (this year's is not quite ready yet).
