Kale Salad with Ricotta Salata

It's father's day, but we did something green to counteract all the steaks being charcoal-burned today.

This was terrific - who knew that dressed kale gets tender?  We used two saladspinners full, and doubled the amount of anchovies, plus bumped up the amount of pine nuts, as it was dinner for 2, not little salads for 6.
