Winter Caprese and Sicilian Tuna

Our colleague Ruth came down from Athens (Ohio) to speak to Holt's Linear B seminar, so we wanted to reward her with a special dinner.
The first course grew from the fact that we always get a fresh burrata when we go to Jungle Jim's.  It would go perfectly with ripe heirloom tomatoes, but since it's winter, we just bought a batch of Roma tomatoes, sliced some of them sideways, sprinkled with salt, and baked them at 250ยบ in the combi oven until they'd developed some flavor. 

For the main course, we bagged some Albacore tuna steaks, currently on sale at Kroger for an amazing $2.99/lb.  They, and the rest of the Romas, went into this flavorful recipe.

When we'd enjoyed that, Barbara sallied out to buy some Graeter's mint chip ice cream (Ruth's favorite), but came back having mistakenly acquired a low-sugar version.  So she and Ruth walked out again to exchange it, and came back with an additional pint of coconut chip.  So things worked out perfectly.
