Salmon and Asparagus with Sauce Maltaise

Thursday 3 March
Atlantic salmon is still $5.99/lb. at Kroger's (thanks, Lent!).  So we bought a nice tail piece, sprinkled with salt and thyme, and pan-fried it until nicely done. 

In the meantime, we roasted a sheaf of asparagus, and it and the fish rested while Holt whipped up a batch of sauce Maltaise.

On the side, some slices of blood orange added sweetness and a touch of drama.
