Barbara is still on the track of
her perfect meatloaf, so she worked with this formula.
She's also trying to make it
easier to put the whole thing together, so mixed all the dry ingredients
(fragmentary wheat thins as well as saltines, bran, plus all the spices, whizzed
up in the robot-coupe) before whizzing the milk, eggs, mustard,
ketchup, tomato paste, and pickle relish into it.
All that got mushed in with the meat and minced vegetables, and
molded into a log on a baking tray, surrounded by slices of peeled sweet
potatoes tossed with oil and salt.
The tray went into a 400º oven for
a half hour, then down to 350º for another half hour, and rested under foil for
the requisite ten minutes. And though
its texture was a bit crumbly, the crust was beautifully brown and the flavor
was terrific.
We are getting close to perfection,
so maybe next time, we'll try mixing in a third egg to get it more solid.
