This was a mashup of two favorite
pastas: penne alla Saffi, and penne with salami, zucchini, and cream. So there was zucchini cut into batons and
minced garlic sautéed in olive oil, but instead of salami there was Saffi-style Schad's ham cut into matchsticks.
As with both, the
pan got a dollop of cream (and capers), and the pasta was tossed in with plenty
of grated romano cheese and a dusting of white pepper.
