Vegetable Curry

Holt loves to pile the spices for his curries on a nice white plate, so we can enjoy the colors before they go into the oil.

We cooked it like this, but with one zucchino, no potato.
It was especially good with a shot of David Warda's spicy green tomato chutney, and a dollop of yogurt.
