Seed-Crusted Tuna Steaks with Ginger Beans

Tonight Holt played out an inspiration for thick albacore steaks marinated in lemon and oil, then crusted with salt and a mix of seeds: sesame, cumin, and crushed coriander.  
They seared on the grill pan on both sides, and were served with spring ginger-fried green and purple beans (still hanging on in the garden).

The mix of seeds made it unusually flavorful, and the fragrance was fantastic too.
