Chicken Breasts with Zephyrs and Tomatoes

Yet another thing to do with zephyr squash, this one to accommodate one zephyr that had overgrown itself and gotten round-bellied and harder-skinned.
We only had skinless and boneless chicken breasts instead of the called for skin-on and bone-in, but we still pressed them down with the big cast iron skillet for good sear and savor.
