Saucy Meatloaf and Mash


Thursday 9 May

There's nothing better than leftover meatloaf, but you don't want to dry it out by reheating.  Instead, we slice it and let it come to room temperature, while we simmer some sauce: caramelized onions moistened with a little chicken broth and lashings of ketchup.  Pile hot sauce on top of meatloaf to warm it up.
Between the slices, some clouds of potatoes mashed with cream and salt.  
Makes us happy.
