Turkey Soup

A big bowl of soup is soothing after an exciting weekend (including an after-church Chinese banquet with the family) and a long drive.  The broth came from the Christmas turkey carcass, slow-cooked according to Barbara's method before we left; the only change was adding a branch of sage to keep the turkey broth distinct from chicken broth.  It rested in the fridge during the weekend.
Into the simmering broth went some Trader Joe's dried multicolor tortellini, boiled until tender; the turkey picked off the carcass; and the slivered soup onion.  You could add sliced carrot or some other vedge with the tortellini, but you don't need much more to make it so good.
