We got our little fryer chicken at
Bare's, as usual. Holt had a yen for
southwestern flavors, so he made up an herb spread of fresh chopped cilantro, lime
zest, cumin (no coriander, as we have the fresh stuff), some Chimayo chile,
salt, and olive oil, and shimmied the paste up under the chicken skin.
We roasted it on a tray with
shallots and potatoes - and my, that was tasty.
