Soletimbocca and Beet Greens

We were kindly invited to the Anthropology Department party at the Cincinnati Observatory, but Holt was not ready to stand up for more than a minute, much less chat and eat Indian food.  
So Barbara went out and showed the flag, then came home to cook some sole fillets (stuffed with Schad's ham - they need to be digestible, not boring), and sautéed red beet greens.
